Beans and Greens
This is an easy side dish that can often be assembled from what’s in your pantry.
2 tbsp olive oil
1 small clove garlic, minced
2 tbsp minced shallot,
¾ tsp paprika
¾ tsp ground cumin
2 – 15 ounce cans low sodium white beans or butter beans, drained and rinsed
Juice of one lemon
2 pounds baby spinach
1/4 tsp lemon zest
Heat oil in a large skillet and over medium-low heat saute shallot, garlic, paprika and cumin for 30 seconds. Watch carefully! Add beans and lemon juice and heat thoroughly, about 3 minutes. Using the back of a fork, mash some of the beans, and add ¼ cup of water to create a chunky puree of beans. Add spinach and lemon zest. Let spinach wilt and serve.
Makes 4-6 servings.
