Salmon Burgers
(makes 3 burgers)
Two (6 ounce) cans or pouches of boneless, skinless wild Alaskan salmon, drained
1/4 cup minced scallions, both white and green parts
1 stalk celery, finely diced
1/2 cup whole wheat panko plain
1 egg
1/4 tsp ground cayenne pepper
1 tbsp dijon mustard
2 tablespoons lemon juice
1-1/2 tsp olive oil
Preheat oven to 450ºF.
Place salmon, scallions, panko, egg, cayenne, mustard and lemon juice in a medium sized bowl. Use a fork to combine ingredients. Form mixture into three patties. Heat remaining olive oil in pan and brown patties on one side. Remove patties with spatula onto a prepared baking sheet with browned side up. Bake at 450ºF until heated through, about 15 minutes. Serve over bed of salad greens, with lemon wedges.
